Eggplant fry recipe an easy and quick way to cook

Eggplant is a very tasty fruit vegetable and available in most of the seasons all over the world. Among different methods of cooking eggplant, fried eggplant pieces are the easiest way. Most people also like it along with fried rice or plain rice. If you do not have more time for cooking, you can prepare this. Eggplant fry recipe is very easy and simple. This is also a healthy recipe; if you check the nutrition value of the recipe, you will see the good things of the recipe. Here I will describe two types of eggplant fry recipe. Both of the recipes are an easy and quick recipe.

Ingredients for eggplant fry recipe:

2 pieces eggplant

1 piece onion

2 tbsp vegetable oil

4 pieces green chili

1 tsp turmeric powder

½ tsp chili powder

1 tsp rice flour

½ tsp salt

 

Process for eggplant fry recipe:

  • Cut eggplants in circular shape pieces of ½ inch thickness.
  • Apply turmeric powder, chili powder, and salt on both sides of the eggplant pieces. Keep the slices of eggplant aside for 10-15 minutes.
  • Apply rice flour on both sides of eggplant pieces.
  • Heat vegetable oil in a non-stick frying pan.
  • Put eggplant pieces into the fryer, fry eggplant pieces until those are deep brown over low heat.
  • Add onion slices and green chilies.
  • Fry the onion and green chilies for 2 minutes.
  • Take out the eggplant fry and put in a paper lined tray, so that extra oil can be absorbed.
  • Eggplant fry is ready to serve.
  • Serve Eggplant fry with fried rice or white rice.

Ingredients for eggplant fry recipe:

1 piece eggplant

2 pieces egg

1 cup breadcrumbs

1 tsp salt

½ cup oil

 

Process for eggplant fry recipe:

  • Cut the eggplant into thin slices.
  • Beat the egg with salt. Keep aside.
  • Heat oil in a deep pan over medium heat.
  • Dip eggplant slices into the beaten egg and then coat with the breadcrumb.
  • Fry the eggplant when the oil is heated enough.
  • Fry both sides of the eggplant until golden brown.
  • Take out the eggplant on a paper lined tray so that extra oil can be absorbed.
  • Eggplant fry is ready to serve.
  • Serve the eggplant fry as a snack or with rice or pulao.
