Mixed vegetables gratin recipes | How to cook yummy vegetables

Vegetables gratin recipe is a very healthy low-fat recipe. It has a mix of rich vegetables making the dish colorful as well as tasty. The recipe will be liked by both veggie lovers and also by the non-veg and occasional vegetable eaters. Here I will describe two different ways of cooking vegetables gratin.

Vegetables gratin method 1

Preparation time 15  minutes
Cooking time 55 minutes
Total time 1 hour 10 minutes
Servings 4

 

Ingredients for vegetables gratin recipe:

250 gm cauliflower

100 gm carrot

150 gm broccoli

100 gm beans

100 gm potatoes

25 gm onion, sliced

15 ml vegetable oil

5 gm garlic, sliced

½ cup low-fat milk

1 oz mozzarella cheese

15 gm breadcrumbs

1 tsp salt

 

Process for vegetables gratin recipe:

  • Cut all vegetables into the same size. Use a vegetable cutter for cutting the vegetables.
  • Boil all vegetables with salt for 6 minutes. Drain out water.
  • Preheat the oven at 425⁰F for 5 minutes. Grease the oven tray with oil.
  • Spread all vegetables on the tray.
  • Add onion and garlic to the vegetables.
  • Pour the milk over the vegetables.
  • Add salt and pepper to the vegetables.
  • Spread breadcrumb and cheese over the vegetables.
  • Bake the vegetables for 35-40 minutes at 425⁰F.
  • Serve the mixed vegetables gratin still warm.

Preparation time 20  minutes
Cooking time 50 minutes
Total time 1 hour 10 minutes
Servings 4

 

Ingredients for vegetables gratin:

2 tbsp sour cream

1 tsp black pepper powder

1 cup quinoa

½ cup broccoli

1 egg

1 tbsp onion, sliced

½ cup carrot, sliced

1 tsp garlic, sliced

1 tsp oil

½ tsp chili powder

½ tsp thyme

1 tsp butter

1 tsp salt

Process for vegetables gratin:

  • Cut the vegetables into the same size.
  • Preheat the oven at 350⁰F for 10 minutes.
  • Cook 1 cup of quinoa as per the instruction of the level.
  • Put oil in a non-stick pan. Sauté garlic and onion slice until they are tender. Turn off the burner. Add thyme and chili powder to the onion mixture.
  • Beat sour cream, egg, and salt.
  • Add carrot slice, broccoli slice, boiled quinoa, fried onion to the sour cream mixture.
  • Grease the ovenproof dish with the butter. Put vegetables mixture in the baking dish.
  • Bake the vegetables for 40-45 minutes.
  • After 40 minutes, check the vegetables. If you think it is not properly cooked, bake it for another 5 minutes.
  • Take out the dish from the oven and serve the vegetables gratin. This recipe is an easy and different taste of vegetables gratin recipe.
