Rice is very common food in the world’s majority.  Although, the cooking process of rice in different ways, yet fried rice is one of the most common ways of cooking rice. Vegetable fried rice recipe includes 4-5 common vegetables, which are readily available. These vegetables are to be cut into a bit medium size pieces and lightly fried in ghee or butter. Usually, miniature rice (kalijira, chinigura etc) are used for fried rice, but here in this recipe basmati rice is used for better taste and look. Although small pieces of vegetables and peas are used in other different fried rice recipes, here vegetable is dominating. This fried rice will bring a good look to your food table. Ingredients for vegetable fried rice recipe:

  • 500 gm basmati rice
  • 1/2 cup broad bean cut into ½” to 1½” size pieces
  • 1/2 cup fresh green peas
  • 2 tablespoons ghee (clarified butter)
  • 1/2 cup cauliflower medium size pieces
  • 1/2 cup carrot sliced to medium size pieces
  • 1 tablespoon cilantro leaves
  • 1 teaspoon garlic paste
  • 1/4 cup potato cut into small pieces
  • 1 teaspoon ginger paste
  • 1 teaspoon onion paste
  • ½ cup tomato cut into small pieces
  • 1 tablespoon soya sauce
  • 1 piece egg
  • 4-5 pieces green chili
  • 1 teaspoon oil
  • 1/2 tablespoon salt

Process for vegetable fried

Step 1 for fried rice recipe

Wash rice and drain out water. Keep the rice aside. Cut all vegetables into the same size with a sharp knife. You can check Amazon or local market for a good quality knife. Wash all vegetables and strain out of the water.

Step 2 for rice recipe

Beat the egg with one pinch salt. Put ½ tsp ghee in a pan and fry the egg until both sides are well cooked. Take off the egg from the burner and slice the egg as julienne. Keep the sliced egg aside.

Step 3 for vegetable rice

Heat the cooking pan on the burner and put ghee (clarified butter) in the pan. When the ghee is heated, add carrot, potato, cauliflower, and broad bean pieces. Add ginger paste, garlic paste, onion paste, soya sauce and stir gently. Cover with a lid and cook for 2-3 minutes. Add green peas, tomato and green chilies and cook for another 4-5 minutes covering with a lid. Add salt to the vegetables. Separately boil the rice with 1 tsp oil and salt in one-liter water until half boiled. Rinse it very well. And keep aside.

Step 4 for fried rice

Add half-boiled rice to the half-cooked vegetable mixture and cook for 10 minutes over low heat. Add cilantro leaves, sliced egg, and keep on the burner with cover and switching off the fire. Take off the fried rice from the burner and take in a serving dish.

Here is your yummy vegetable fried rice recipe. Serve while hot with beef chili or chicken fry or beef sizzling. By adding chicken cashew nut salad it will be more delicious.
