If you ask me who is your favourite chef? My answer- my mother is my favourite chef. I noticed that she always used mustard oil for her cooking that gives a special smell to the food. That special smell used to make us realized that mom is cooking for us. We know there are many benefits of mustard oil. Till mid 80s she used mustard oil. All of my siblings loved her cooking. Even if it is a normal menu but the taste was awesome. Her every kind of cooked dish and even some pickles were just awesome. She loved to cook and like to invite people every time. There was not any day when she ate without a guest. She passed away 14 years ago but still I remembered smell of her food.

My mother lately suffered from gastritis pain. Many of us said that mustard oil could have increased the gastritis. At that time soya bean oil came in the market. The oil was cheaper and people said that it is healthy and light. So the soya bean oil easily got popularity. Since then we have been using soya bean oil for cooking. But until now some of us are suffering from gastritis even from early age. My nieces and nephew, both are suffering from severe gastritis from their early age. Now I realized that use of mustard oil as the reason for gastritis was a rumour for marketing the soya bean oil and they were successful.

Now a day occasionally we use mustard oil for some special cooking and particularly for making pickles. Since, mustard oil is costlier than soya bean oil, people do not afford to use it for regular cooking specially for frying that requires huge amount of oil. We know there are many benefits of mustard oil. I saw my father always used mustard oil as a lotion. He rubbed his body with mustard oil before his shower. He also put mustard oil in his nose, ear, and belly button. He told us that this oil protected him from cold and coughing. Believe me or not, we really didn’t see him never suffering from cold or coughing. It really worked for him. Until now whenever we are caught by severe cold, asthma and cough, we use boiled mustard oil with garlic. It gives us relief. Mustard oil is very good tonic for new born baby.

Some Benefits of Mustard Oil:

1.Natural sunscreen

If you have allergy to sunscreen, mustard could be the alternative to it? No problem there is a natural sunscreen around with us. If you know the name of natural sunscreen you won’t believe that. The name of our natural sunscreen is “Mustard oil”. Yes, mustard oil is very good as a natural sunscreen.

2. Helpful for removing the black spot of the skin

If anybody hasn’t heard that mustard oil is good for removing dark spot of skin, I know he/she couldn’t believe it. Because most of us believe that mustard oil darkens the skin. But the fact is, mustard oil is very effective to removes the black spots on the skin. If you use a pack of mustard oil you will find a magical result. Make a pack by mixing Bengal gram powder, yogurt, mustard oil and a few drops of lemon juice. Wash your face with cold water after 10-15 minutes. For getting good results use this pack three times a week. It will make your skin smoother and softer.

3. Helpful for preventing the lips crack

Lip crack in dry weather is very common problem. Many people have this problem so much that lip baam does not work. Apply a little mustard oil to the lips. This natural myocardial lip prevents the leak to make the lips soft and soft. Use two to three drops of mustard oil in your belly button in every night. After some days you will find the result. It not only prevents your lip cracking, but also helps you to reduce your joint pain.

4. Helpful for preventing the hair from ripe

Mustard oil contains the nutrient content, vitamins, and minerals, which prevent the hair from premature ejaculation. Before you go to sleep, massage the oil in the hair and the palate of the head every night. This will prevent your hair from ripe.

Mustard oil can reduce the risk of cardiovascular diseases by up to 70%. It is better than olive oil because the later does not have an ideal ratio of omega-6 (N6) and Omega-3 (N3) fatty acids useful in reducing heart complications. It reduces the level of cholesterol in the body as well as the chances of heart disease.

We’ve all heard of the phrase ‘ and apple a day keeps the doctor away’. So if we had to have an apple a day, why not make it a fun snacks instead of just eating it as an ordinary fruit. Even though some kids love fruits and some just hate it, there’s usually a much more unified opinion about desserts. Almost all kids are fond of sweets, be it simply chocolate or cream filled cake. So this caramelized  apple recipe is a great way to get the children to eat fruits. Even for grown ups this is a very quick and easy snack but one which is a bit more than just boring old sliced apples.

Method 1 for caramelized apple recipe

Ingredients for caramelized apple recipe

1/3 cup sugar

1 tsp ground cinnamon

1 tbsp butter

4 firm cooking apples. Halved and cored

½ cup water

  • Wash and peel the apples.
  • Cut an apples into 12 piece long slices.
  • Combine sugar and cinnamon in a flat based bowl.
  • Heat a large non-stick frying pan over medium heat and add butter. I suggest using an induction cooktop. That way even your little ones can help you make this since there’s no visible fire.
  • Put the apples into the cinnamon mixture, with the cut sides pressed down.
  • Place the apples, cut side down , in the hot non-stick frying pan.
  • Sprinkle with the remaining cinnamon mixture.
  • Cook apples for 7-8 minutes or until they begin to brown
  • Add water to the pan.
  • Cover the pan and reduce heat to low.
  • Let it simmer for 5-7 minutes and keep adding water if the sugar begins to burn.
  • Remove the apples from the non-stick frying pan.
  • Place apples on a plate and drizzle with sauce from the non-stick frying pan. Sprinkle with the sugar mixture for that extra bit of sweetness.

  • Wash and peel the apples. Diced the apples. Keep it in a bowl with a wrap.
  • In a large, non-stick frying pan, over medium heat, melt the butter.
  • Add brown sugar, salt and cinnamon and stir until bubbly, for about 2-3 minutes.
  • To the pan, add the apples and cook for 8-10 minutes or the apples are tender (but not mushy).
  •  Stir apples occasionally but not continually. This way the apples will be caramelized but burning will be prevented.
  • This can be served warm or refrigerated for later use. To use the refrigerated ones, warm slightly in the microwave or stove before you serve them.
  • Serve this on top of your yogurt or French toast.

Ingredients for mashed potato

1 kg gold potato

2 cups liquid milk (half and half or light cream)

1 cup chicken broth

3 bay leaves

1 tsp salt

1 tsp ground black pepper

 

Process for mashed potato

  • Scrub, peel, and cut potatoes into 1-1/2 inch pieces.
  • Place potatoes, bay leaves, chicken broth, and milk in a large saucepan.
  • After boiling reduce the heat.
  • Simmer, and covered with a lid.
  • Cook for 30 minutes or until potatoes are tender.
  • Drain and reserving cooking liquid.
  • Remove the bay leaves by using tongs.
  • Smash potato with potato masher in a large bowl until it is smooth. If you don’t have potato masher don’t worry, use a steel glass. Press the potato with the bottom part of the glass. You will see how easy it is. If there is nothing with you just use your hand for smash the potato.
  • Add 1 cup of reserved cooking liquid, salt, grounded black pepper to the smashed potato.
  • Stir it gently.
  • If necessary season to taste with salt and pepper.
  • Your favorite mashed potato is ready to serve.
  • Serve this as per your choice with chicken or vegetable or fruit or anything.

  • Drain and cool slightly.
  • Peel potatoes and shred with a grater.
  • Add butter, and cheese to the shred potatoes in a large mixing bowl.
  • Stir it gently. Add chopped onion, pepper, salt, and sour cream to the potato mixture.
  • Greased a casserole with butter.
  • Preheat the oven at 200⁰c for 10 minutes.
  • Bake the mashed potatoes at 180⁰c for 45-50 minutes. Or until brown.
  • Cheesy mashed potato is ready to serve.
  • Before serving sprinkle with paprika.
  • Serve with any kind of vegetable or chicken.

  • Serve with vegetable salad or fruit salad as per your choice.

500 gm bombil fish

2 tomatoes

1 onion, sliced

1 tbsp garlic paste

1 tsp turmeric powder

1 tsp chili powder

1 tbsp corianders leaves

Process for Bombil/bombay duck or Lotte fish curry

  • Cut the fish into a 2-inch size and wash.
  • Cut the tomatoes into thin slices. Keep aside.
  • Heat oil in a non-stick pan over medium heat.
  • Add onion slice, garlic paste, turmeric powder, chili powder, cumin powder, and salt. Stir it and fry it for 1 minute.
  • Add 1 cup of hot water to the ingredients.
  • After blooming then add fish pieces and tomato slices to the ingredients mixture.
  • Cover with a lid and cook over medium heat for 8-10 minutes.
  • After 10 minutes add green chilies slice and coriander leaves.
  • When water level becomes a low turn off the burner.
  • Bombil/bombay duck or Lotte Fish curry is ready to serve.
  • Serve the fish curry with white rice.

4-5 green chilies

1 tbsp salt

1 cup oil

  • Boil radish leaves slice with onion slices (1 tbsp), garlic slices, green chilies, and salt. Cover with a lid. Cook until leaves are tender and water becomes dry.
  • Heat oil another pan on the burner over medium heat.
  • Add remaining onion slices, cumin powder, turmeric powder, chili powder, and salt to the oil.
  • Add ½ cup of hot water and put fish slices.
  • When water becomes dry, add radish leaves slice.
  • Stir it constantly and grind the fish.
  • Mix rice powder with ½ cup of water.
  • After 5 minutes, add rice powder to the leaves mixture.
  • When water becomes dry, take out the curry and switch off the burner.
  • Bombil/bombay duck or Lotte fish with radish leaves is ready to eat.
  • Serve the fish with tortilla or rice.

A few days ago I have invited a special guest at my home. As you know I love to cook and like to prepare new and innovative food for my family and guests. And if there is a special guest, there is no word to say. I want to make some special and new food for my special guest. I opened my old and special recipe diary. I have an old recipe diary where I wrote my own and collected recipes. I believe that if you make a special food for a special guest then it will give him a good impression. I also thought about the outlook for the food. Because we know that “ the favorite first impression is the best impression”. Hence I chose a fish cake recipe from my favorite diary. I found that all the ingredients for the fish cake recipe are available at my home. So I didn’t have to go the market to buy anything. I didn’t feel any complicacy in making the cake. It was an easy and simple recipe but also delicious and good looking.

I made the cake and the taste was just simply awesome and my new guest also liked that. He appreciated it very much. He was a diabetes patient so the delicious fish cake was appropriate for him. I want to thank my husband because he helped me a lot for preparing the fish cake. I want to share with you one of my secret messages, my husband is my food taster when he is available at home! When I cook new food he always helps me. He inspires me every time, which gives me the inspiration for cooking.

Some of us don’t like fish. When you serve them the fish as a fry or curry then they won’t take this. They say, “I don’t like fish or I don’t eat that fish or I don’t like the flavor of the fish.” Even though they don’t know the name of the fish. Sometimes I think they give the answer habitually that they don’t eat fish. But if you give them the fish cake without mentioning that, that is a fish cake just see what happens. They will grab it without saying anything. They even don’t ask any flavor of it. So if your kids or family member don’t like to eat fish try with them like this.

In this recipe, if you want you can add vegetables. Here I didn’t use vegetables. Here I included a video for you so that you can make the cake easily. This recipe is good as a snack.

Ingredients for fish cake recipe

2 cups carp fish, boiled

1 cup bread, chopped

2 tbsp onion, sliced

2 tbsp butter

¼ tsp black pepper powder

2 eggs

1 cup milk

3 tbsp tomato sauce

2 tbsp lemon juice

1 tsp salt

2 tsp green chili, sliced

Process of fish cake recipe

  • You can take any kind of big fish for this fish cake recipe. Here I took carp fish. Boiled the fish pieces with 1 tbsp lemon juice and salt for 10 minutes.
  • Take out the bones, fat, and skin from the fish pieces. Smash the fish meat very well and keep the minced fish aside.

  • Cut the onion into julienne size.

  • Put 1 tbsp butter in a non-stick frying pan over medium heat. I love to use the T-fal non-stick frying pan for my cooking.
  • Add the onion slice to the butter and fry it over low heat until tender. Keep it aside.
  • Separate the egg yolk and white part of the egg in separate bowl.
  • Whisk egg yolk and white part of egg separately with a hand whisker or fork. Keep both aside.
  • Cut the bread into small cube size.
  • Mix egg yolk with the liquid milk. Whisk with a hand whisk very well.
  • Mix minced fish, bread pieces, green chili sliced, milk mixture, tomato sauce (here I used homemade tomato sauce), salt, rest of lemon juice, pepper, and fried onion in a bowl very gently with a spoon or hand. If you use your hand for mixing wash your hand before mixing.

  • Take an oven proof glass baking dish where you can serve the cake.
  • Grease the baking dish with the butter or spray for greasing.

  • Preheat the oven at 200°c for 10 minutes.Pour the mixture into the baking dish.
  • Pour the mixture into the baking dish.

  • Spread the white part of egg over the fish mixture.
  • Bake the cake at 180°c for 45 minutes to 1 hour. Oven baking time and temperature depend on the oven to oven. You can adjust time and temperature as per your oven system. Here I used Miyako electric oven. I am very comfortable with this. For the best electric oven, you can check shop or online.

  • Check the cake with a stick after 40 minutes. Insert a stick in the cake.
  • If the stick comes out with clear and clean then the cake is ready to serve.
  • If the stick comes out with sticky then need more time for baking.
  • Bake until the top is golden brown.
  • When the cake is properly baked switch off the oven.
  • Keep the cake in the oven for 10 minutes.
  • Take out the cake from the oven.
  • Cut it into your desired size.
  • The fish cake recipe is ready to serve.
  • Serve the different tasty, delicious and healthy fish cake to your special guest or family or beloved friends with any kind of sauce.

Pasta is very good source of carbohydrates. Pasta is a dynamic food item which you can consume as your lunch, dinner, snack or even breakfast. Here I described two types of pasta recipes. Those are prawn vegetable pasta recipes and chicken vegetable pasta recipes. Those are easy and simple.

Prawn vegetable pasta recipe

Ingredients for prawn pasta recipes

100 gm prawn

250 gm pasta

1 tbsp carrot, chopped

1/4 cup green peas

1 tbsp garlic, chopped

2 piece green chilies

½ cup tomato sauce

1 tbsp cheese, grated

2 tbsp olive oil

½ tsp salt

Process for prawn vegetable pasta recipes

  • Boil pasta with 1 tsp oil and salt until the pasta is tender.
  • Strain all water from the pasta.
  • Clean prawn and keep it aside.
  • Boil carrot and peas until half tender.
  • Put oil in a non-stick pan over medium heat.
  • Fry the garlic slices until the smell coming, then add prawns.
  • Fry the prawns until fragrant.
  • Add carrot slice, boaled peas, green chilies and cook for 2 minutes.
  • Add sauce and stir it very well.
  • Add boiled pasta and stir it.
  • Add cheese and stir for 1 minutes.
  • Turn off the burner. Prawn vegetable pasta is ready to serve.
  • Serve the pasta with sauce.

Ingredients for chicken vegetable pasta recipes

 

1 cup shell type pasta

1 cup twist type pasta

½ cup chicken breast

½ cup carrot, sliced

½ cup long bean, sliced

2 tbsp cooking oil

2 mini packet pasta spices (usually held inside the pasta packet)

2 tsp salt

1 tbsp onion, sliced

1 slice lemon

3-4 green chilies

Process for chicken vegetable pasta recipes

 

  • Boil two types of pasta separately with 1 tbsp oil and ½ tsp salt for 5 minutes or until the color of the pasta changes as tendered and then strain out water by a strainer.
  • Boil carrot slices for 7-8 minutes and long bean slices for 5 minutes and then strain out water using a strainer.
  • Apply lemon and salt with the chicken breast and then boil for 8-10 minutes with hot water. Cut into small cubes after boiled properly.
  • Heat oil in the cooking pan and add green chilies and onion slice.
  • Add boiled chicken cubes, boiled carrot, and long bean slices. Stir and cook for one minute.
  • Add half cup hot water and then add the two types of boiled pasta including the pasta spices.
  • Stir and cook for two minutes or until the water evaporates.
  • Take the yummy chicken vegetable pasta in a serving dish.
  • Simple chicken vegetable pasta is ready to serve.

I always want to make healthy and delicious food for my friends and family. Recently I had to make some special food which is suitable for diabetes patient. My father was a diabetes patient. So my mother always had to conciuos about his food. Now many of my friends are suffering from diabetes in their early age. So all of us have to concious about their food and nutrition.  Chicken with bell peppers recipe is a suitable food for diabetes patients. Today I want to dedicated this diadetics recipe for my diabetes friends. Last week I prepared this recipe for a diabetes patient and she apprecited it very much. That made me very happy .

Here are two recipes of chicken with bell peppers and one bell peppers salad recipes are included. One baked in the oven and the other cooked in the normal burner. Both the recipes are good for diabetic and heart patient due to low calorie and low fat. These are very easy to prepare as well.

Baked chicken with  bell peppers

Baked chicken with bell peppers recipe is a healthy recipe. Chicken is always suggested as low fat meat. It is also commonly available meat in the market at affordable price. Taste of chicken is also liked by everyone. So you can prepare different dishes with chicken at anytime. We know baked food is always good for health.

Ingredients for baked chicken with bell peppers

250g skinless chicken breasts

2 tbsp bell pepper, chopped

1 tsp garlic paste

1 tsp ginger paste

½ tsp cumin powder

½ tsp coriander powder

¼ tsp turmeric powder

½ tsp chili powder

1 tbsp lemon juice

2 tbsp yogurt

½ tsp salt

1 cup water

1 tbsp vegetable oil

1 tsp cilantro leaves, finely chopped

 

Process of baked chicken with bell peppers

  • Remove the fat from chicken pieces and split into 4 medium pieces with a sharp knife. I always use Cuisinart knife for cutting. This knife is very comfortable to use.
  • Wash and rinse it very well.
  • Marinate chicken breast with garlic paste, ginger paste, cumin powder, coriander powder, turmeric powder, chili powder, lemon juice, yogurt, and salt and keep in the refrigerator for 2-3 hours.
  • Preheat the oven at 350⁰F for 10 minutes.
  • Apply oil in a wok and fry bell pepper. Here I used T-fal wok. I used this company frying pan for many years. Fry the sliced bell pepper.
  • After 1-2 minutes add the marinated chicken breasts. Turn over the chicken to fry on both sides with the bell pepper.
  • Greased the baking tray with oil.
  • After about 2 minute shift the chicken pieces to a greased baking tray.
  • Bake at 350⁰F for 40-45 minutes, or until properly baked. Baking time is always depended on oven to oven. I used Miyako electric oven. For my oven this time and temperature is perfect.
  • Baked chicken is ready to serve.
  • Transfer the chicken and bell pepper in a serving dish.
  • Serve the bell paper baked chicken with paratha, naan, or tortilla and sauce.

1 tbsp garlic clove

1 tbsp ginger, finely chopped

1 tbsp sesame seeds

1 tbsp soya sauce

1 tbsp onion, sliced

1 tbsp yellow bell pepper, sliced

1 tbsp red bell pepper, sliced

1 tsp salt

 

Process of chicken with bell peppers

  • Remove the fat from chicken pieces.
  • Cut the chicken breast into thin strips with a sharp knife.
  • Wash and rinse it very well.
  • Cut onion and bell pepper into long strips.
  • Heat 1 tbsp oil in a wok over high heat.
  • Add chicken and stir. Cook for 1 minute.
  • Add ginger, garlic, salt, and sesame seeds to the chicken.
  • Cook for 2 minutes.
  • Add soya sauce then cook for 1 minute. Here I used Henz soya sauce. Personally I liked this brand’s sauce. You can use any branded sauce as per your choice. Keep it aside.
  • Heat oil in another non-stick frying pan over medium heat.
  • Add onion to the oil and stir it.
  • After 1 minute add sliced bell pepper and stir until tender.
  • Add cooked chicken slices and cook altogether for 30 seconds.
  • Chicken with bell pepper is ready to serve.
  • Transfer the chicken and bell pepper to a serving dish.
  • Serve the chicken with tortilla or rice or bread.

100 gm chicken

50 gm green bell pepper

50 gm yellow bell pepper

50 gm red bell pepper

1 tbsp olive oil

1 tbsp lemon juice

1 tsp black pepper

Process of chicken with bell peppers salad

 

  • Take bone less chicken and remove fat.
  • Cut the chicken pieces with a sharp knife into thin and long slices.
  • Wash and rinse it very well.
  • Heat oil in a nonstick frying pan.
  • Stir fry all chicken pieces with a little bit of salt.
  • Cut the bell peppers into thin slices.

  • Mix lemon juice, honey, salt, pepper, and olive oil in a small bowl. Whisk and make the salad dressing.

Cardamom is rich in micronutrients and important vitamins and minerals. It contains niacin, pyridoxine, riboflavin, thiamine, vitamin A, vitamin C, sodium, potassium, calcium, copper, manganese, magnesium, phosphorous, iron, zinc etc. Studies have shown that dietary cardamom had a positive result in counteracting colorectal cancer to an extent up to 48%.

Cardamom was traditionally considered as a herb in India and it is still considered as one of the essential ingredients in Ayurveda. Cardamom is also used in traditional Chinese medicine. It is used to cure throat problems as well as a remedy for teeth and gum infections. It has many other medicinal effects like curing congestion of the lungs, pulmonary tuberculosis, inflammation of the eyelids, gastrointestinal disorders, disintegrating kidney and gall bladder stones.

Control of Blood Pressure and Cardiovascular Health: Cardamom significantly lowers blood pressure. Researchers have found that cardamom doses in cardiovascular conditions resulted in a lower heartbeat and control of hypertension.

Control of Cholesterol: Protection Against Gastrointestinal Diseases: Cardamom is used in Ayurveda, Chinese medicine and the Unani system as a remedy for gastrointestinal disorders. The methanolic extract from cardamom helps in controlling gastrointestinal disorders such as stomach cramps, acidity or burning of chest, flatulence, and other gastrointestinal disorders. It also helps to digest.

Treating Urinary Disorders:  Cardamom has been used in Ayurveda, as a remedy for urinary tract diseases and infections such as cystitis, nephritis, and gonorrhea.

Anti-Asthmatic and Improve Blood Circulation: In traditional therapies such as aromatherapy, cardamom has been used to cure asthma and bronchitis by improving blood circulation to the lungs. The essential oil extracted from cardamom has been tested and found that cardamom is effective in promoting blood circulation in the body.

Good for Nausea and Vomiting:  Traditionally, cardamom has been used as a remedy for nausea. Cardamom is an effective tonic and stimulant and is good for calming the sensations of nausea and vomiting.

A sore throat:  Cardamom is a good remedy for sore throats. Those having painful sore throats can gargle every morning with Cardamom boiled in water.

Dental Diseases:  In Ayurveda and traditional Chinese medicine have been using cardamom for curing dental problems.

Breath Freshener:  Cardamom pods and seeds are very good ingredient as breath freshener if chewed and kept in the mouth for some time. Due to the presence of its oil, it gives the special flavors and aroma. Thats why the essential oil of cardamom is used as a popular ingredient in chewing gum.

Anti-Inflammatory Properties:  Cardamom possesses anti-inflammatory and anti-carcinogenic properties. Therefore, it is good for muscle and joint pain according to the Ayurveda.
