The easy fruit cake recipe is another quick and easy recipe from Sultana’s recipe. There are so many cakes in the cake world. Fruit cake is one of them, very tasty and delicious cake. The cake is always delicious; the fruit cake recipe is not only delicious it is also healthy food. Because it contains fruits in it. It looks good.

This cake is easy to make. All ingredients are common and available at home. The process for an easy fruit cake recipe is like plain cake. By adding fruits, this cake’s taste becomes different from the other cakes.

Ingredients

  • 100 gm butter
  • 100 gm sugar
  • 2 pieces egg
  • 80 gm all purpose flour
  • 20 gm corn flour
  • 10 gm baking powder
  • 20 gm milk powder
  • 3-4 drops vanilla essence
  • 50 gm dry fruits (nuts, raisin, dry cherry or dry blue berry)

Instructions

  1. Sift flour, cornflour, baking powder, and milk powder with a strainer, so that those are mixed gently and kept aside. Mix 1 tsp flour with all dry fruits and keep them aside.
  2. Keep butter at room temperature. Take butter and sugar in a bowl and beat with a hand grinder or with a big long-handled spoon.  Beat until the mixture becomes like cream. Add egg one by one to the butter mixture and mix well with butter mixture. Add vanilla essence and stir gently to make the cake batter. And dry fruit slowly to the batter.
  3. Grease the cake mold with butter. Sprinkle flour over the butter.
  4. Preheat the oven to 200°C for 10 minutes. Take a long mold (Non-stick metallic box for making a cake) and grease the mold with butter. Put the mixture in the mold up to 2/3rd of the mold should be filled. Put the mold in the oven; set the temperature to 180°C and bake for 40-45 minutes.
  5. After 40 minutes when the box is filled and the color of the cake is brown, pass a clean thin stick through the cake, if the stick comes out clean then the baking is completed, if the liquid cake is pasted on the stick, the cake needs more time (about 5-10 min).
  6. When baking is completed, take the cake out of the oven and brush butter over the upper side of the cake. And keep for 10-15 minutes at normal temperature for cooling. Slice the cake into about ½ inch thick pieces.
  7. The easy fruit cake is ready for serving.

Notes

If you don’t have an oven you can make this cake easily on your burner. Use nonstick baking mold for this recipe.
