Vegetables gratin recipe is a very healthy low-fat recipe. It has a mix of rich vegetables making the dish colorful as well as tasty. The recipe will be liked by both veggie lovers and also by the non-veg and occasional vegetable eaters. Here I will describe two different ways of cooking vegetables gratin.

Ingredients for vegetables gratin recipe

  • 250 gm cauliflower
  • 100 gm carrot
  • 150 gm broccoli
  • 100 gm beans
  • 100 gm potatoes
  • 25 gm onion, sliced
  • 15 ml vegetable oil
  • 5 gm garlic, sliced
  • ½ cup low-fat milk
  • 1 oz mozzarella cheese
  • 15 gm breadcrumbs
  • 1 teaspoon salt

Process

  • Cut all vegetables into the same size. Use a vegetable cutter for cutting the vegetables.
  • Boil all vegetables with salt for 6 minutes. Drain out the water.
  • Preheat the oven at 425⁰F for 5 minutes. Grease the oven tray with oil.
  • Spread all vegetables on the tray.
  • Add onion and garlic to the vegetables.
  • Pour the milk over the vegetables.
  • Add salt and pepper to the vegetables.
  • Spread breadcrumb and cheese over the vegetables.
  • Bake the vegetables for 35-40 minutes at 425⁰F.
  • Serve the mixed vegetables gratin still warm.

Ingredients for vegetables gratin

  • 2 tablespoons sour cream
  • 1 teaspoon black pepper powder
  • 1 cup quinoa
  • ½ cup broccoli
  • 1 egg
  • 1 tablespoon onion, sliced
  • ½ cup carrot, sliced
  • 1 teaspoon garlic, sliced
  • 1 teaspoon oil
  • ½ teaspoon chili powder
  • ½ teaspoon thyme
  • 1 teaspoon butter
  • 1 teaspoon salt

Process

  • Cut the vegetables into the same size.
  • Preheat the oven at 350⁰F for 10 minutes.
  • Cook 1 cup of quinoa as per the instruction of the level.
  • Put oil in a non-stick pan. Sauté garlic and onion slice until they are tender. Turn off the burner. Add thyme and chili powder to the onion mixture.
  • Beat sour cream, egg, and salt.
  • Add carrot slice, broccoli slice, boiled quinoa, fried onion to the sour cream mixture.
  • Grease the oven-proof dish with the butter. Put vegetables mixture in the baking dish.
  • Bake the vegetables for 40-45 minutes.
  • After 40 minutes, check the vegetables. If you think it is not properly cooked, bake it for another 5 minutes.
  • Take out the dish from the oven and serve the vegetable gratin. This recipe is an easy and different taste of vegetable gratin recipe.
