In Indian recipe, varieties of pickles are served at the food table as a side dish. Most of the fruits that have a bit of sour or bitter taste while still unripe are used as the main ingredient for pickles. Mango pickles are made of green mango, although there are other varieties of mango pickle recipes.

Usually, pickles give extra appetite to your meal. Some people cannot think his/her dinner or lunch without a pickle. But, many people in Bangladesh and India, especially women and children love to eat pickle even without any other food. The mango pickle discussed here is one of those types that are made for eating even without any other food dish. Here I describe two types of mango pickle recipes. Hope you will enjoy it.

Sweet Mango Pickle

Ingredients

  • 1 kg green unripe mango
  • ½ kg molasses
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 250 ml mustard oil
  • 1 teaspoon salt
  • 1 tablespoon five spices powder

Process

  • Remove skin from green mango.
  • Cut into long slices (1×2 inch)
  • Apply salt and turmeric powder.
  • Keep it in sunlight for 1 hour.
  • Boil molasses in a deep non-stick pan.
  • Add chili powder to the molasses.
  • After blooming then add mango slices to the molasses mixture.
  • Cook it with medium heat.
  • Cook until dry.
  • Fry five spices without oil.
  • Grind the spices and keep them aside.
  • Heat oil in a pan.
  • Spade hot oil over the pickle and add five spices powder.
  • After cooling preserve the pickle in a glass jar.
  • The mango pickle is ready to eat.

This pickle is delicious. You can serve it with rice or pulao or biryani.

Ingredients for sweet and sour mango pickle

  • 1 kg green mango
  • 1 teaspoon turmeric powder
  • ½ cup white vinegar
  • 1 teaspoon mustard paste
  • 1 teaspoon salt
  • ¼ cup of sugar
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • ½ cup of molasses
  • 1 tablespoon chili powder
  • 1 tablespoon five spices powder
  • 250 ml of mustard oil

How to prepare the pickle

  • Cut green mango into cubic size (2×2 inches with skin).
  • Apply half of the mustard paste, turmeric powder, and salt.
  • Keep in sunlight for 2 hours.
  • Heat mustard oil in a deep pan over medium heat.
  • Add the rest of the mustard paste, turmeric powder, chili powder, ginger paste, and garlic paste to the oil. Stir it and fry it for 1 minute.
  • Then add molasses, vinegar, and salt to the spices.
  • After blooming, add mango pieces.
  • Cover with a lid and cook it over medium heat or until tender.
  • Add five spices powder before removing it from the burner.
  • Cool down the mango pickle and preserve it in a glass jar.
